    Take a sip of the steaming broth first—its spicy seafood flavor, the one you love most. Then take a bite of that luncheon meat, carefully pan-fried on both sides before it’s added to the noodles. In an instant, your stomach and your heart both feel warm.
    Then comes a quick “shush” as the noodles are slurped in. It’s cooked for just three minutes—softness and chewiness exactly to your preferred texture, the one you’ve said you like best. Ah! And finally, don’t forget the leafy greens you were given so that this meal is nutritionally balanced… “Have noodles—you eat it.” It sounds simple, but behind it is the tenderness and thoughtfulness of the person who cooks the noodles for you.
    Maybe it’s precisely because a single bowl of noodles changes with that unique kind of love that the world is full of all sorts of noodle dishes.
